Lots of leftovers? Here’s a suggestion for vegetable stock from one of our members. Thanks Kelly!

My favorite thing to do when a week has flown by with too many dinners out and the fridge is full of veg, and/or I have the stems and trimmings from other recipes – just add it all to a pot with 3 quarts of water, a little salt, toss in onion and/or ginger and/or herbs of any kind and make veg stock. Great of course to make rice with, soups, or freeze for future use.
