Here is a recipe for purslane.  Let us know what you did with your purslane -Purslane Pasta with Cherry Tomatoes

3C raw chopped purslane
2C chopped in half cherry tomatoes
1/2 C Green onion

Dressing:
1/2C oil
1/4C herbal vinegar (I just used red wine vinegar)
1 Clove garlic
pinch salt
Tbs Dijon Mustard
1 Tbs honey
2/3C parsley

Mix all of the dressing ingredients in a blender.

Make a bag/box of pasta.
Put in all of the veggies and the dressing. Let it sit 3-4 hours or
overnight.
