Our honey is raw (not pasteurized or heated), varietal (various sources of flowers) and only strained (to remove large wax particles) so all the health benefits of the pollen and local foraging are still there. Brooklyn honey typically is very sweet and light but each beekeeper's hives will produce their own taste based on where their bees like to go!
