HONEY

BEEKEEPERS

Tom Gordon: PLG (Fenimore St)
Karen Oh: PLG (Sterling St)
Note: Karen has honey from 2024 but did not harvest this year. Unfortunately, Liz is no longer beekeeping and Din also did not have honey this year.

Our beekeepers are small producers (5 or less hives). All honey is from a single location and harvest date (not mixed with other honey). Our honey is raw (not pasteurized or heated), varietal (various sources of flowers) and only filtered to remove large wax particles. All the health benefits of the pollen and local foraging are still there. Brooklyn honey typically is very sweet and light but each beekeeper’s hives will produce their own taste based on where their bees like to go!

All pure honey from plant sources (not fed syrup) will crystallize over time. Depending on the source of nectar the bees have collected, honey may crystallize very quickly, which is normal. Your honey may be liquid or crystallized and will vary in color depending on harvest. Many people prefer the more solid version as it is more manageable. You can gently re-liquify crystallized honey by setting the jar in hot water. Do not heat over 98.6F to maintain all it’s raw benefits.

Note: Honey is priced by weight per ounce. Sizes listed are the weight of the honey in the jar.
